Cheddar & Chive Guinness Bread
2 3/4 cups sifted all purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 (12-ounce) bottle Irish stout beer (can substitute a less bitter beer)
1 cup grated Irish Dubliner cheese (about 4 ounces)
1/4 cup grated Irish Dubliner cheese, reserved
1/4 cup chopped chives
1/4 cup Irish butter, melted
Preheat oven to 375° F and spray the inside of a loaf pan with Pam or rub with butter to grease.
In a Kitchen Aid Mixer, thoroughly mix together the sifted flour, sugar, baking powder, and salt – do this on #2 setting for about a minute.
Slowly pour in the beer and mix on #2 until the dry ingredients are evenly moistened. With the mixer on low, add in 1 cup of shredded cheese and the chives. Mix, scraping the sides to incorporate.
Scoop out the batter into the greased loaf pan and pour the melted butter evenly over top of the dough. If you like the top more crispy, add the cheese before baking, otherwise bake about 30 minutes then sprinkle the remaining shredded cheese over the top and return the loaf to the oven to bake an additional 15 to 20 minutes or until a toothpick in the center comes out clean.
Cool in the pan for 5 minutes then serve warm with butter.
